Mexican Soup with Tomato Quesadillas

 

This hearty, warming Mexican bean soup uses basic cupboard ingredients and is cooked from scratch. Add extra chili powder for a spicy kick. The comforting and delicious bowl of hot red beans and corn soup is bursting with fresh and simple flavors. You can add a top with your favorite tasty goodies (I love avocadoes and tomatoes ). So let's go ahead and make this Hot soup especially in winter weather :)





Course: Lunch/Dinner

  • Total time: ~30-mins

Ingredients:

  • Non-Salted canned Kidney beans
  • 1 small cup Sweet corns
  • 2 big chopped Tomato
  • 1 chopped Onions
  • 1 tbsp ginger garlic paste
  • Olive oil
  • salt
  • Black Pepper
  • chili flakes
  • Wheat flour Tortillas
  • 1 Sliced Avocado
  • Lemon
  • 1tbsp Turmeric powder
  • 1tbsp 
  • Vegetable stock/broth (optional)
  • Tomato Paste

Instructions: (Soup)

  1. Add olive oil to Pot and let it heat on medium flame.
  2. Add chopped onion and saute them for 5 minutes until they turned to brownish.
  3. Now after onion turns brownish in color add ginger garlic paste, chili flakes(as per your spice level), turmeric powder, black pepper, and cumin. cook for another one minute.
  4. Now add chopped tomatoes and cook them.
  5. Remove the pot from heat and add this paste to the blender and blend until smooth.
  6. Pour the blended mixture back to the same pot and bring it up to medium-low heat. Stir frequently and cook for 5 minutes.
  7. Add the red beans and corn to the pot and bring them up to high heat.
  8. Now add vegetable broth(optional) or water as per the consistency of your choice.
  9. I like thick consistency so here I added a small bowl of vegetable broth and cooked them for 5-6 minutes.
  10. Add salt as per taste!
  11. Now the soup is ready you can top it with avocados and some tomatoes.

Quesadillas :

1) Here I am using Ready made Tortillas you can also make Tortilla from any flour.
2) First divide the Tortillas into 4 slices.
3) Heat the grilled pan.
4) Put the tortillas in the pan and heat them for 1 minute.
5) Now Cut the tortillas from the middle, so that from one tortilla you can see 2 parts and spread the tomato paste inside.
6) Again heat them in low flame
7) Repeat for every Tortilla and enjoy!

Benefits:

Red beans are high in dietary fiber, which helps to promote digestive health while increasing the absorption of healthy nutrients. Regular consumption of dietary fiber also helps to reduce bowel problems such as constipation and diarrhea and reduces the risk of cancer.
