Carrot Rice with Mushroom coconut curry


The carrot rice with Mushroom coconut curry is a very healthy, simple, delicious, and perfect dish for lunch or dinner. I never tried any curry with coconut milk, for the first time I tried carrot rice with coconut mushroom curry and it turns super delicious.

With great texture and so many flavors, this dish makes a superb comforting dish :)



Course: Lunch/dinner

  • Preparation Time: ~10mins
  • Cooking Time: ~30mins
  • Total time: ~ 40-mins

Ingredients:

  • 500 grams of Mushrooms
  • 1/2cup coconut milk
  • 1 tbsp Ginger Garlic paste
  • 1 chopped onion
  • 1tbsp coconut oil
  • 1 tbsp coriander powder
  • 2 Grated carrots
  • 1 cup of Para boiled rice
  • Chopped coriander leaves
  • Salt to taste
  • 1 tbsp Pepper Powder
  • 1 tbsp Garam Masala
  • 1tbsp chili

Instructions: ( Mushroom coconut curry)

  1. Heat 1tbsp coconut oil in a pan, when it is hot add chopped onions saute them for a minute add ginger garlic paste, red chili, coriander powder,garam masala, salt, and pepper, saute them for some minutes.
  2. Add coconut milk and let it boil for some time until it turns to thick like consistency.
  3. Now add mushrooms and mix them all together well.
  4. Cover and cook for 5 minutes.
  5. Garnish with coriander leaves.
  6. Now your mushroom coconut curry is ready :)
  7. If you want you can also have it with bread but I tried with carrot rice.

Instructions: ( Carrot Rice)

  1. Soak rice for 5 minutes.
  2. Turn on the flame, Add 2 cups of water to the pan and let it boil.
  3. Now transfer soaked rice to this pan.
  4. Let them boil for 10 minutes until rice is tender and water is absorbed.
  5. Remove from heat and let it sit, covered it.
  6. Now add grated carrots to rice and mix them all together with salt and pepper.
  7. Carrot rice is Ready!
  8. Serve with coconut mushroom curry.
Note: You can also drain out the access water from rice.

Buckwheat Noddles is also known as Soba noodles in Japanese,  buckwheat noodles are a good source of protein and fiber than other noodles.
