Sweet Potato Pancakes

Hey Everyone! I hope everyone is fine in this quarantine time. As everyone is thinking out, how to spend time, I have decided to write blogs on different meals, I try every day. And this time, I tried sweet potato pancakes.
As we know, sweet potatoes are highly nutritious, a great source of fiber and vitamins, and also support your immune system, makes it a perfect dish for the morning.


Sweet Potato Pancakes

  • Course: Breakfast
  • Preparation Time: ~15mins
  • Cooking time: 10mins
  • Total time: ~25mins

Ingredients: 
  • 2 boiled sweet potatoes
  • 2 cup wheat flour
  • 1/4 tsp turmeric
  • 1/4 tsp ajwain/ carom seeds
  • 1 chili, finely chopped
  • 1/2 tsp ginger paste 
  • 1/2 tsp salt
  • 1 chopped onion
  • 1/2 tsp garam masala
  • 2 tbsp chopped coriander leaves
  • Oil for roasting
Instructions:
  1. Boil 2 sweet potatoes for ~15mins and let them cool. Once they are cool, peel the skin off.
  2. Take a big bowl and add 2 cups of wheat flour, 1/2 tbsp turmeric, 1/4 tsp ajwain, 1 chili (finely chopped), 1/2 tsp ginger paste, 1/2 tsp salt, 1 chopped onion, 1/2 tsp garam masala.
  3. Mesh the sweet potato and kneed it with-in the same big bowl with other ingredients
  4. Put water, if required (I did not have to add water)
  5. Once all things are mixed together and the dough is ready, make a small size ball dough.
  6. Roll the dough balls to make thin-crust (as you like)
  7. Take you non-stick pan and let it warm over a gas stove for 5 mins
  8. Spread the 1/2 tbsp olive oil in the pan (if you like) 
  9. Place the rolled thin-crust pancake over the pan and cook nicely from both sides.
  10. Finally, your pancake would be ready and you can serve with yogurt and pickle.

The dish would be delicious and you can also put sesame seeds over it like I prepared for my family. My family loved it and I hope, it will be the same for you too.
