Vegies Quesadilla recipe

Quesadilla is very easy and healthy food. It is easy to make with any available ingredients. Today I tried with ragi flour and beetroot paste. This recipe is very simple and you can replace flour with normal wheat flour or oats flour as per the availability.


Course: Breakfast/lunch

  • Preparation Time: ~10mins
  • Cooking time: 10mins
  • Total time: ~20mins

Ingredients:

  • Mixed ragi flour with beetroot for Tortillas
  • 1tbsp olive oil
  • 2 chopped garlic
  • 1 medium-size sliced onion
  • 1 medium-size sliced carrot
  • 1 medium-size sliced red bell paper 
  • Sweets corn 2 tbsp
  • 2 tbsp Tomato paste
  • Black pepper
  • Mashed paneer
  • Coriander leaves for garnishing
  • Salt as per taste


Recipe:

  1. Heat oil in a pan, add garlic, onions, and saute them.
  2. Then add chopped vegetables, mashed paneer and just saute them for 3 to 5minute
  3. Sprinkle black pepper and salt generously.
  4. Now for Tortilla, first take one cup of ragi flour and mix some beetroot mash.
  5. Add little salt, pepper and make the dough.
  6. Then make 2 small dough, Rolled them in circular form and rolled until it becomes thin.
  7. Take a non-stick pan and place a rolled tortilla and cook nicely from both sides until tortilla looks crunchy/golden.
  8. In the same way, prepare one more tortilla.
  9. Now take one tortilla spread tomato paste, sauteed vegetables, and garnish with coriander leaves.
  10. Then place stuffed tortilla over the pan and cook again for more than 2 minutes.
  11. Cut into wedges and serve them.


Benefits:

  • Ragi flour is a whole grain that is gluten-free and rich in fiber that helps with weight loss and diabetes, it's packed with calcium, amino acids, and vitamin D.
  • Beetroot is a great source of fiber, folate, manganese, potassium, iron, and vitamin C.

  Bruschetta is a traditional Italian dish that made with natural ingredients. I think this is one of the easiest,  tasty, and fresh recipes anyone can prepare. Bruschetta is a common Italian appetizer that is usually served before the meal.
