Colorful Thai Bowl with Coconut Rice

I've been really into rice bowls lately. They are my easy go-to healthy one-bowl meal. Colorful Thai bowl with coconut rice is the perfect way to get your veggies and carbs all in one! The good thing is that you can add any vegetables of your own choice and this can be one of our go-to meals because it is so easy to prepare and super delicious.

Ingredients:

  • Jasmine Rice/Long grain rice one cup
  • Coconut milk 1 and a half cup
  • Chopped Onion
  • Grated carrots
  • Brocolli
  • 5-6 Greens beans
  • Grated cucumber
  • Sliced bell paper
  • 3 tbsp peanuts
  • Black paper
  • 3 garlic cloves
  • Sliced Paprika
  • 2 tbsp Corriander leaves
  • coconut oil
  • 1 Avocado

Instructions:


  1. First, rinse your rice until the water runs clear. Next toast the rice in coconut oil for 3 minutes in a pan and then add water, coconut milk, and salt, continually stir them and bring the liquid to boil, Once boiled, slow down the flame and cook for 5-10 minutes until it turns soft /easy to chew. Let it simmer for some time and now coconut rice is ready.
  2. Take a pan to add 2 cups of water, salt, 1tbsp coconut oil and add broccoli slices, beans and boil them for 5 minutes.
  3. Take a bowl to add rice first and then add boiled broccoli, beans, grated carrot, grated cucumber, Avocado, and coriander leaves.
  4. Now spread black pepper, black salt as per taste.
  5. Garnish with lemon and some peanuts.
  6. A healthy Thai bowl is ready!

  • Coconut is high in magnesium, which is essential for bone health and the metabolism of carbohydrates, and cholesterol. They are also rich sources of iron and copper which help in the formation of red blood cells.

  Bruschetta is a traditional Italian dish that made with natural ingredients. I think this is one of the easiest,  tasty, and fresh recipes anyone can prepare. Bruschetta is a common Italian appetizer that is usually served before the meal.
